Update pinned version of aind-data-schema-models #500

aind-data-schema-models has been updated to contain an extended list of funding organizations in organizations.csv.

See AllenNeuralDynamics/aind-data-schema-models#326 and AllenNeuralDynamics/aind-data-schema-models#324

We need to add a pinned version of the aind-data-schema-models version to pyproject.toml to https://pypi.org/project/aind-data-schema-models/6.3.1/ to ensure that the new version is used.
