feat: Add devtools toggle for development env and fix flake

Changes

flake.nix

• Use proper nixpkgs url.
• Refactor and update overall code.
• Remove electron-nix as it isn't being used at all and add electron in-place.

package.json

• Remove run:nix as simply won't work for us Nix users. Not sure if this was tested properly but pnpm will always report an error as shown below. While this can be fixed and worked around I don't think it's needed as we have mise handling everything for us.
