[FEATURE] Add option to override existing env vars - #54

This adds an option to override existing environment variables with values from the `.env` file by setting the `DOTENV_CONNECTOR_OVERRIDE` environment variable. The implementation uses the `overload()` method in the `SymfonyDotEnv` adapter and the corresponding parameter in the `SymfonyLoadEnv` adapter.
Also get rid of prophecy in new tests and make sure test files follow code style
