docs: reframe around the 30-format coverage + 0.2.0 changelog - #48

The README, mdBook (intro + Input & normalization), and changelog still described a 6-format CSV/Parquet tool. Rewrite them to reflect what anomalyx now is: a universal normalizer over 32 parser plugins across five domains — tabular/structured, columnar/data-lake/db, logs & observability, security telemetry, and network — feeding one record model and the same detector taxonomy. Document the per-domain anomaly angles (beaconing via cadence on pcap, DGA via entropy on DNS, config drift via struct.schema, exfil via mahalanobis on flows, alert-type drift via chi2 on EVE/CEF), the feature-flag lean build, and add the 0.2.0 changelog entry.
