Overview
This PR is an automatic release cut: it moves the repo from 5.82.0-SNAPSHOT to 5.81.2 across version sources (.version, podspecs, SystemInfo.frameworkVersion, test app plists, SampleCat SPM pin, and docs redirect HTML).

CHANGELOG.latest.md is replaced with the 5.81.2 RevenueCatUI notes (paywall video audio, bottom sheet identity, workflow/web_view work, Xcode 27 support, etc.), and the same section is appended to CHANGELOG.md. No application or SDK source changes appear in the diff beyond the version string in SystemInfo.swift.
