feat(config): `MANUAL_INPUT` as part of choice

First, after hooks were introduced, it was applied to filetypes, so filetypes should be renamed to choices, because it correctly answers what it is. And then, MANUAL_INPUT can be used as a part of these choices with the hook on_choice, vim.ui.input.
